Cooking for One

Finding meals for just one person can be challenging as many sources today focus on audiences with children. But if you live alone and mostly cook for yourself, you don’t have to look any further. We have a few recipes for you to try.

Today we bring you three recipes that include SNAP-eligible items with only one serving in mind. You can also double up on the recipe if you would like to keep leftovers for another meal.

Pizza Lava Toast

1 serving

Ingredients

  • 2 teaspoons butter
  • 2 slices sourdough bread
  • 1 ½ ounces sliced mozzarella cheese, divided
  • 1/2 ounce sliced pepper jack cheese
  • 5 slices pickled jalapeno
  • 5 slices pepperoni
  • 1 tablespoon pizza sauce (freeze the rest of the sauce for this or other recipes)
  • 1/4 teaspoon Italian seasoning, divided
  • Crushed red pepper, to taste
  • Ground black pepper, to taste

Directions

  1. Preheat oven to 375°F then line a sheet pan with parchment paper.
  2. Spread butter on both sides of each slice of bread and place on the prepared pan.
  3. Bake, flipping once halfway through, until bread is lightly browned on both sides, about 8 minutes.
  4. Cover the perimeter of one bread slice with half of the mozzarella cheese, leaving the middle part of the bread empty.
  5. Add the pizza sauce to the indentation and sprinkle half the Italian seasoning over the top. 
  6. Cover with remaining ½ ounce mozzarella cheese and pepper jack, followed by jalapeño and pepperoni. 
  7. Garnish with remaining Italian seasoning, crushed red pepper and black pepper.
  8. Bake until the cheese is melted and golden-brown, about 5 minutes.
  9. Slice in half and serve.

Creamy Chicken Ramen

When planning for this recipe, any frozen chicken broth cubes in the freezer will be a great source for the chicken broth. If you don’t have any leftover chicken on hand, consider giving canned chicken a try.

Ingredients

  1. 1 tablespoon unsalted butter 
  2. 2 cloves garlic, minced
  3. ½ cup chicken broth
  4. ½ cup whipping cream
  5. 1 (3 ounce) package ramen noodles (without flavor packet)
  6. 1 teaspoon reduced-sodium soy sauce
  7. ¼ cup chopped cooked chicken
  8. 1 pinch everything bagel seasoning (optional)

Directions

  1. Melt butter in a heavy skillet over medium heat.
  2. Add minced garlic and cook, stirring, until fragrant, about 30 seconds.
  3. Add chicken broth, cream, and ramen noodles.
  4. Cook, stirring occasionally, until noodles soften, about 3 minutes.
  5. Add soy sauce and chopped cooked chicken. Allow to get hot.
  6. Serve garnished with everything bagel seasoning if desired.

Italian Pasta Salad

1 serving

Ingredients

  • ½ cup uncooked rotini pasta (about 1 cup of cooked pasta)
  • ⅓ cup chopped red bell peppers
  • ¼ cup broccoli florets
  • 1 ounce salami -chopped
  • 8 pitted black olives
  • 3 tablespoons Italian salad dressing
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons shredded mozzarella cheese

Directions

  1. Boil the pasta according to the package instructions.
  2. Drain and let it cool completely.
  3. In a large bowl, combine the cooled pasta with the rest of the ingredients.
  4. Toss everything together until well mixed.
  5. Your Italian pasta salad is ready to eat! Serve it right away or chill it for even more flavor.
