Pantry Highlight: Dry Lentils 

Welcome to the third installment of our Pantry Highlight series. In today’s blog, we will be discussing dry lentils and how you can use them to make a delicious new recipe for your family.

When it comes to budget-friendly and nutritious food options, dry lentils are a standout choice. These small legumes pack a powerful punch in terms of both health benefits and culinary versatility. If you are looking for a plant-based alternative to eating and cooking meat, try out lentils.

Why try dry lentils?

A small investment can yield a large quantity of cooked lentils, making them a cost-effective option for those on a tight budget. Additionally, dry lentils have a long shelf life, allowing you to buy in bulk without worrying about them spoiling.

Lentils can be used in a variety of dishes, from soups and stews to salads and casseroles. Their mild flavor allows them to absorb the spices and seasonings of any recipe, making them an excellent base for a variety of cuisines.

Preparing Lentils

Slow Cooker Lentil Soup

This Slow Cooker Lentil Soup is perfect for a nutritious and budget-friendly meal with little time needed in the kitchen. All ingredients below are SNAP-friendly.

Ingredients:

  • 6 cups water
  • 1/4 cup fresh parsley, chopped (or 2 tablespoons dried)
  • 2 teaspoons beef bouillon (or 2 cubes beef bouillon)
  • 1 1/2 cups lentils (dry)
  • 2 carrots (medium, sliced)
  • 1 onion (medium, chopped)
  • 2 celery stalks (sliced)

Directions:

  1. Wash hands with soap and water.
  2. Mix all ingredients together in a slow cooker.
  3. Cook on low for 8 to 10 hours or high for 4 to 5 hours.
  4. Serve hot with crackers or bread.
